Some classic Sunriver Resort chef holiday recipes from the Sunriver Resort archives to warm your belly and home!

Macadamia Nut, White Chocolate & Banana Bread Pudding


2 Cups Milk

6 Cups Heavy Cream

8 Whole Eggs

2 Tbls. Vanilla Extract

2 Cups Brown Sugar

1 Tbls. Cinnamon

1 Tbls. Nutmeg

4 Bananas/Cut into ½” cubes

1 ½ Loaf White Bread cut into 1” cubes

1 Cup Macadamia Nuts

12 Ounces White Chocolate ¼ Cup Melted Butter


1. Heat White Chocolate and 1 Cup Heavy Cream over water bath

2. Mix everything together

3. Toss bread with mix

4. Pour into 4” deep buttered hotel pan

5. Cover and let sit over night

6. Bake 350 degrees for 1 hour covered, then 10 minutes uncovered

Cinnamon butternut squash soup 


2 Onions(chopped)

4 Stalks celery (chopped)

8 Cloves garlic

2 Cups dry white wine

3 Tbls. cinnamon 

1 Tbls. nutmeg

1 Tbls. salt

½ Tbls. black pepper

2 Cups brown sugar

1 Large butternut squash (roasted and peeled)

4 Cups chicken stock

2 Cups cream(or ½ & ½)


1. Saute onion and celery until soft

2. Add garlic and cook for two minutes

3. Add wine, cinnamon, nutmeg, salt, pepper, and brown sugar-reduce by half

4. Add stock, cream and squash-bring to a boil

5. Remove from heat and puree well (taste for seasoning)
