Back in April we asked our Facebook followers what they would like to see posted on our page. George Reed wrote: "The recipe for the "Seafood Pot" that used to be on the menu in the Owls Nest." It took us a few months to track it down, George, but here it is!
Makes one serving
Ingredients
Salmon - 2 oz
Black Cod - 1 oz*
41-50 shrimp - 2 oz
oil - .25 oz
heavy cream - 6 oz
garlic minced - 1 T
shallots - 1 T
herbs - 2 t
butter - 1 t
white wine - 1 oz
lemon juice - .5 oz
Steps
1) Sweat garlic and shallots in a saute pan.
2) Add fish and shellfish.
3) Deglaze with lemon juice and add cream
4) Adjust with salt and pepper and herbs
Enjoy!
*Original recipe called for Chilean Sea Bass. 'Seafood Watch' has ranked this fish as 'Overfished' and should be avoided.
