Ingredients:
6 medium sized, red heirloom tomatoes
3 T. olive oil
2 T. garlic, minced
1 medium yellow onion
1 T. fresh basil, chopped
1 T. fresh oregano, chopped
Salt and pepper to taste
Preheat oven on to 350°. In a shallow baking pan, add oil, garlic, and onions. Roast for 15 minutes or until soft. Add tomatoes into pan. Roast for 20 minutes or until soft. Add basil and oregano and roast for 4 more minutes. Remove from oven and let stand for 10 minutes to cool slightly. Add mixture to a food processor and puree lightly, leaving the sauce a bit chunky. Add salt and pepper to taste. Makes 4 cups of sauce, or enough for two large pizzas.
