As part of Sunriver Resort’s Destination Dish assignment for Destination Hotels & Resorts this November, Chef Fabrice has created a sauce that epitomizes the holiday season in a uniquely Pacific Northwest way.
A cranberry chutney with savory notes of mustard, and the sweet crunch of Walla Walla onions, this accent dish is served best with a chilled Oregon Pinot Grigio. We hope you will enjoy it as much as we do!
Pacific Northwest Cran-Apple Chutney
Yield-16oz, four servings
Serving suggestion: Drizzle ½ cup over salmon filet, serve with an Oregon Pinot Grigio
2.5 Cups Apples, cored and diced (we like Oregon’s Hood River Valley Gala Apples)
2.5 cups Yellow onions, diced (we suggest those from Walla Walla, Oregon)
3 tbsp Brown Sugar
½ cup Orange juice
4 tbsp Butter
2 tbsp Ground Mustard
¾ tbsp fresh grated ginger
1/8 tsp Ground cloves
¼ cup fresh cranberries
- In a large pot - sauté onions on medium heat in butter until soft, (approximately 3-5 minutes)
- Add apples and the rest of the ingredients and stir
- Cook for approximately 20-30 minute to reduce to a syrup consistency
