There are two types of people in this world: those who live for chocolate and those who could go without. If you are the former, you may need to sit down while we describe how classically trained French Chef Fabrice incorporates chocolate into all four courses of our For Love & Chocolate dinner available this month at the Sunriver Resort Lodge.
The first course begins with a White Chocolate Panna Cotta and local Goat Cheese Salad, including roasted beets, blood orange vinaigrette and fresh arugula. This being the Pacific Northwest, it can be paired with either a glad of Ruffino Orvieto white wine or a nice pint of Widmer Brother’s Hefeweizen.
The second course includes a delicate Cocoa-Seared Black Cod on a bed of mashed banana & sweet potato and garnished with bacon, hazelnuts and a balsamic reduction. Add a Genesis Riesling or Omission Pale Ale to bring out the soft flavors.
The richest and most savory third course features a thin chocolate pasta and Duck Confit, garnished with wild mushrooms, a dash of chili oil, and a drizzle of mole sauce. We suggest a Diseno Malbec or Widmer 'South by Northwest' craft beer to accompany.
Dessert is a classic warm Chocolate Ganache, with a house-made marshmallow and vanilla bean ice cream, garnished with graham cracker crumbs. Enjoy with a Jackson Triggs Vidal Ice Wine or Chocolate Russian Imperial Stout.
